How to Make Apricot Pudding (Muhallabieh Qamar Al-Din)

- 2 cups water
- 1/2 cup sugar
- 1/4 cup cornstarch
- 1/4 cup cold water
- 1 tsp rose water
- 1/2 cup chopped pistachios for garnish
Step-by-Step Instructions
10 stepsSoak the dried apricots in 2 cups of water for at least 4 hours or overnight.
In a blender, puree the soaked apricots with the soaking water until smooth.
Pour the apricot puree into a saucepan and add sugar. Heat over medium heat, stirring until the sugar dissolves.
In a separate bowl, mix cornstarch with 1/4 cup cold water until smooth.
Gradually add the cornstarch mixture to the apricot puree, stirring constantly to prevent lumps.
Continue cooking over medium heat, stirring constantly, until the mixture thickens and coats the back of a spoon.
Remove from heat and stir in rose water.
Pour the pudding into serving dishes and let it cool to room temperature.
Refrigerate for at least 2 hours or until set.
Before serving, garnish with chopped pistachios.
